黄梨饼和自制黄梨馅~ Pineapple Tart and Homemade filling

2014年的农历新年的第一道年饼!! 黄梨饼!!这道年饼应该是每一家每一户必备的!! 没它真的没那气氛呢~~ 蚊子我第一次制作黄梨饼,感觉超兴奋的!! 哈哈哈!! 尤其当黄梨馅制作出来时, 恨不得买多几颗黄梨~ 但国外的黄梨很少, 所以当蚊子一看到便宜又漂亮的黄梨! 只有一支箭冲上去"抢购"!!! 哈哈哈哈哈! 为黄梨疯狂!

蚊子看到很多网友提供的自制黄梨馅~ 心都痒痒的! 当一看到Kathrine Kwa的简易黄梨馅,直接开动了! 蚊子只用了大约40分钟煮好黄梨馅, 很香呢!饼皮是用了大家推荐Sonia 的入口即化~ 把炼奶代替了砂糖, 饼皮的味道就是带点淡淡的甜咸味, 很香!

事不宜迟!黄梨饼献上!



食谱来自: Kathrine Kwa, Sonia Nasi Lemak

食谱参考: Jozelyn ~ 我的烹饪食谱

可以制作: 大约85颗

材料:
饼皮
牛油/奶油     250g
炼奶 (Condensed milk)    65g
蛋黄       2 颗
普通面粉    370g

黄梨馅

黄梨   2 颗  (中型)
糖       200g
柠檬汁   2 tsps
桂皮 (Cinnamon Stick)  半支








做法:
饼皮
1. 把牛油和炼奶用打蛋器打至奶油状.
2. 逐颗加入蛋黄搅拌均匀.
3. 面粉过筛后, 加入 (2) 中, 揉成团即可.
4. 休面30分钟. (蚊子休面后放进冰箱, 要用时才拿出来)

黄梨馅
1. 黄梨削皮, 切块.
2. 黄梨放进Blender搅碎,然后过滤多余水分.  (黄梨的心才是会炒出榨, 不要丢哦!一起搅)
3. 水分丢掉, 果肉倒进锅, 加入剩下的材料大火煮滚. (糖不要一次加完, 如果感觉不够甜可以再加)
4. 然后跳中小火, 慢慢煮稍微干,一直搅拌至干和金黄色即可.
5. 凉后放入冰箱大约1个小时, 就可以用了!

黄梨饼
1. 黄梨馅捏成小团,方便包起来. (手指可以沾点水防粘)
2. 饼皮分几份,用面粉棍擀成1-2mm的薄面皮, 用到分割成长方形).
3. 放入黄梨馅, 卷起.
4. 表面涂上蛋黄液.
5. 送进已预热170度的烤箱, 烤20分钟.

完成!! 蚊子在此预祝大家新年快乐!!! 马到成功!
